Everything starts with the broth
Bones, charred onion and ginger, and a sachet of spice, held at a simmer. Everything else in the bowl is assembly.
Phở is a broth dish before it is a noodle dish. The bones go in first and the pot sits at a simmer while everything else waits: the noodles, the beef, the plate of herbs you tear in yourself. Get the broth right and the rest is straightforward. Get it wrong and nothing in the bowl can save it.
